Mini Mummies
A spooktacular Halloween snack or party appetizer.

INGREDIENTS:
12 mini sweet peppers, rinsed and dried
2 cups cooked, shredded chicken breast *
½ cup frozen cauliflower rice
½ cup unflavored Greek yogurt or low-fat cream cheese, softened
1 tablespoon taco seasoning
½ teaspoon Renate Ayurveda Chef’s Blend Seasoning, optional
1, 8-ounce package crescent rolls
48 candy eyeballs
DIRECTIONS:
Preheat oven to 350 degrees, F.
Line a baking sheet with parchment paper.
Cut the peppers in half lengthwise with the stems on. Remove and discard the seeds.
Place the cauliflower rice in a microwave-safe bowl, cover, and microwave for 3-5 minutes, until cauliflower is soft.
In a medium bowl, add the yogurt or cream cheese and taco seasoning. Mix well.
Stir in the chicken and cauliflower rice. Gently stir to combine.
Stuff the pepper halves with the filling.
Unroll the crescent dough and cut it into thin strips. Wrap each pepper with 1 - 2 crescent roll strips to create a mummy look. Make sure to leave a gap where the eyes will be placed.
Place the peppers an inch apart on the parchment paper-lined baking sheet. Transfer to the oven. Bake for 15-18 minutes, or until the dough is golden brown.
Remove mummies from the oven, and carefully add the candy eyeballs while the filling is still warm.
Chef notes: Substitute chicken breast with ground turkey or chicken or plant-based sausage (finely chopped). Do not overstuff the peppers.
What is taco seasoning? It’s essentially a blend of seasonings that work well together for seasoning Mexican or Tex-Mex foods.

1½ tsp. dried oregano
1½ tsp. onion powder
1 tsp. salt
1 tsp. pepper
¼ tsp. cayenne pepper
