Home-Made Pancakes
This homemade pancake mix makes it easy to whip up a batch of delicious pancakes at a moment’s notice and also makes a great gift for almost any occasion.
When you make your own pancake mix, you control the ingredients and freshness. This is also a fun and educational activity to do with kids - teaching math & science with measuring and mixing techniques.
Ingredients & Equipment for Dry Pancake Mix
(makes 8 batches)
8 quart sized (32-ounces) wide mason jars with lids
8 cups all-purpose flour
2 cups dried powdered milk or dried buttermilk
1 1/2 cups pure granulated cane sugar
1 1/2 teaspoons Kosher salt
1/2 cup baking powder
2 teaspoons ground nutmeg
2 teaspoons ground cinnamon
1 teaspoon ground cardamom
1 tablespoon flaxseed meal
Instructions for making the pancake mix:
In a large bowl combine all of the dry ingredients.
Carefully divide the mix into the jars ( about 1 1/2 cups per jar)
Cover tightly with lids and store in a cool dry place for up to 3 months to ensure freshness.
To make one batch of the pancakes (yields 6-8 medium)
1 1/2 cups of pancake mix (1 jar)
1 egg
1 cup water
1 teaspoon vanilla extract
1 teaspoon almond extract
2-3 tablespoons unsalted butter, more for serving
Directions:
To the jar, add the egg, water, vanilla and almond extracts.
Using a spatula or spoon, stir to combine then cover with lid.
Shake well until the mixture is completely incorporated.
Preheat a griddle on medium to medium-high heat.
Melt bits of butter in the pan or spray with non-stick cooking spray.
Pour or scoop the batter onto the griddle, using about 1/4 cup measure for each pancake.
Cook until there are bubbles on the surface and the underside of the pancake is lightly golden, about 1-2 minutes.
Flip and cook for an additional 1-2 minutes until the other side is light golden.
Repeat process until all the batter is finished.
Serve pancakes with warm maple syrup and fruit of your choice.
Chef’s Tips:
To make blueberry pancakes, after pouring the batter in the pan/griddle add fresh blueberries on top, cook for 1-2 minutes flip and cook the other side.
To ensure shelf life and freshness of the pancake mix, make sure the baking powder and all spices are fresh. (Check for expiration dates)
