Eggs are a great source of protein. Though, they do face the controversy - “ good for you, bad for you, then back to good for you”. But, most evidence is in favor of eating them. I will leave that up to you. If you are looking for ways to spice up your eggs to make them even better, try this simple versatile recipe that incorporates protein and veggies. Feel free to serve on top of a slice of avocado. The more, the merrier - now you can have your eggs and veggies too!

Egg-Cellent Pepper Eggs
SERVES:4
INGREDIENTS
1 large red, yellow or green bell pepper- sliced into four ¼ - inch rings.
4 eggs
Kosher salt
Fresh ground black pepper
2 tablespoons chopped parsley
1 tablespoon finely chopped green onions
cooking spray
DIRECTIONS
1. Heat a nonstick skillet over medium heat and lightly grease with cooking spray.
2. Place the bell pepper rings in the skillet and sauté for one minute. Flip the rings, then crack an egg in the middle of each ring.
3. Season with salt and pepper and cook until the eggs are cooked to your liking, 3 to 5 minutes.
4. Transfer to serving plates and garnish with the chopped parsley and green onions.
Chef’s Tip: If you like your eggs “over-easy” (like me) place a lid on the skillet and allow to steam for 1-2 minutes.
Alternatively, this recipe can be prepared using 6 eggs and the entire bell pepper – sliced into 6 rings, cook the peppers and eggs in batches.
You can also use different color bell peppers for a rainbow of flavors. Kick it up a notch with a sprinkle of your favorite shredded cheese. The possibilities are endless, I encourage you to experiment with what you like. I’d love to hear what you’ve tried. Share in the comments.
