With a few smart swaps this gooey, cheesy sandwich can be made into a delicious and healthy lunch.
Serves: 2
Ingredients
· 4 slices whole grain bread or honey wheat bread
· ½ avocado, thinly sliced
· 2 slices green tomato, thinly sliced
· 4 slices Havarti cheese
· 4 slices muenster cheese or 2 slices * (see notes on cheese below)
· ¼ cup baby spinach
· ¼ cup alfalfa bean sprouts (optional)
· 1 tablespoon butter
· Dill pickles to serve (optional)
Instructions
Place avocado slices on top of two slices of bread. Top each with 1 slice Havarti cheese. Then top with one slice green tomato then 1 slice muenster cheese.
Add spinach, then top with 1 more slice each of Havarti cheese.
*Add the sprouts and last 2 slices of muenster cheese. If you’re not using the sprouts, eliminate this step.
Top with final slices of bread.
Butter a large skillet and melt butter over medium-low heat.
When butter is melted, place each sandwich in the pan, and cover with a lid. Keep a close eye so as not to burn the toast.
Cook for 2-3 minutes then flip and continue cooking for about another 3 minutes, until cheese is fully melted.
Serve and enjoy with pickles and a side salad if desired.
Shamrock Shake
Get a taste of the Irish with this healthy, refreshing and creamy shake.
My love of mint and tea along with my food curiosity led to a taste testing recipe for a Shamrock Shake that is not filled with artificial ingredients. That’s when I thought of using fresh mint leaves (from my overstocked garden) and Matcha to create a shake that I can enjoy.
Matcha is finely ground powder of specially grown green tea leaves that has a velvety texture and rich intense flavor. When added to this shake, it creates a striking flamboyant light, nutty and breezy taste. The fresh mint leaves and Matcha adds natural green so there’s no artificial color in the shake. Be sure to use an ice cream that has no artificial sweetners, additives or preservatives.

Ingredients
· 1 ½ cups natural ingredients vanilla ice cream
· 1 tablespoon Matcha powder or 2 tablespoons Matcha Green Tea Latte Mix
· ½ cup fresh mint leaves + 1 mint sprig for garnish
· ½ teaspoon pure mint extract
· 2 slices of kiwi, for garnish
· Shaved dark chocolate and chocolate syrup (optional)
Instructions
1. Place the ice cream, Matcha powder or Latte mix, mint leaves and mint extract into a high-speed blender.
2. Blend until smooth.
3. Pour into two glasses and garnish with kiwi slices and mint sprig.
4. Add shaved chocolate & chocolate syrup if desired.
Chef’s notes: For a thinner shake, add ¼ cup milk to the mixture before blending. For a subtle mint flavor, eliminate the mint extract.
