Meatless BBQ Cauliflower Wings

September 1, 2021

Cauliflower served as a meatless appetizer, made with a handful of ingredients is so delicious that it will keep everyone coming back for more!

Raise your food I.Q. - Panko breadcrumbs have a dryer and flakier consistency than regular breadcrumbs, and as a result they absorb less oil and produces lighter and crunchier tasting fried food.

Serves: 4-6

Ingredients

  • 1 large head cauliflower (about 5-6 cups florets)

  • 1 cup water

  • 3/4 cup all-purpose flour

  • 3 tablespoons LadyRen Chef’s Blend all-purpose seasoning*( see notes on substitute spices below)

  • 2 cups of your favorite barbecue sauce

  • 1/2 cup diced medium green onions, for garnish

Instructions

1.              Preheat the oven to 450 degrees F. Line a large baking sheet with non-stick aluminum foil.

2.              Wash and cut the cauliflower into bite sized pieces, leaving some of the cauliflower stems on each piece, it makes them easier to pick up when eating.

3.              In a large bowl, add the water, flour and LadyRen Chef’s Blend. Whisk until well combined.

4. In a medium bowl, add the Panko breadcrumbs.

5.             Add the cauliflower to the batter in the large bowl, and toss to coat. Remove the pieces of cauliflower, one by one, and tap off the excess batter a few times on the side of the bowl. Roll them in the breadcrumbs, coating on all sides, and place on the prepared baking sheet.

5.              Bake for 15 minutes. Flip them over and bake for 10-12 more minutes, until brown and crispy. Remove from the oven.

6.              Toss the florets with 1 1/2 cups barbecue sauce to coat in a large bowl, then return to the pan. Put them back in the oven for 15 minutes.

7.              Remove from the oven, brush with more barbecue sauce before serving, if desired. Sprinkle with diced green onions and serve with Ranch Dressing for dipping.

Chef Notes:

  1. The advantage of using LadyRen Chef’s Blend is that all of the following ingredients are already in one jar. Saving you time, and of course, made with high quality, pure and organic ingredients.

You can substitute with the following ingredients:

  • 1 tablespoon garlic powder

  • 1 teaspoon adobo all-purpose seasoning

  • 1 tablespoon onion powder

  • 1/4 teaspoon salt

  • 1/4 teaspoon sweet paprika

    2. Leftovers can stored in a covered container in the refrigerator. Reheat in the oven until warm, or even in the microwave.
