Oven Baked Mahi-Mahi & Asparagus

Mahi Mahi has a mild taste like swordfish but a little sweeter with a firm texture that flakes easily when properly cooked. It is a lean fish, rich with vitamin B12. It is often regarded as one of the healthiest fishes to eat.  With all fish, fresh wild caught is best, but you can also use frozen fillets.

Mahi-Mahi

This easy baked fish dinner comes together in under 30 minutes making weeknight dinners simple, yet delicious, healthy, nourishing and satisfying. It’s also naturally gluten free and dairy free.  LadyRen Chef’s Blend makes it even easier since you don’t have to measure individual spices and herbs to season the fillets.

Serves: 4

Ingredients:

4 fillets of fresh or frozen mahi-mahi. For frozen, place thawed fillets on a paper towel and blot them dry to remove excess moisture. 

6 tablespoons LadyRen Chef’s Blend all-purpose seasoning, divided

¼ cup plus 1 tablespoon olive oil, divided

3 tablespoons fresh chopped parsley, for garnish

2 bunches fresh asparagus, rinsed, woody ends removed

 Directions:

Preheat the oven to 375 degrees Fahrenheit.

Place the asparagus in a resealable plastic bag; add 1 tablespoon olive oil and 1 tablespoon LadyRen Chef’s Blend all-purpose seasoning. Seal and massage the bag to distribute the spice mix and olive oil. Set aside.

Line a large baking sheet with aluminum foil.

Place the mahi fillets on the foil and drizzle with olive oil then generously rub with the remaining LadyRen Chef’s Blend seasoning on both sides.

Bring the sides of the foil up to create an edge towards the fish to prevent the juices from leaking out.

Bake for 12 minutes, flip the fish. Remove the asparagus from the resealable plastic bag and add to one side of the pan. Return to the oven and continue baking for another 12-13 minutes, or until the fish is about 137 degrees Fahrenheit.

Remove from the oven. Sprinkle with fresh chopped parsley.

Chef Notes:

You can adjust the seasoning to fit your taste preferences as well. You can use the suggested herbs, or any herbs and spices you have on hand and think would taste delicious.

·       ½ teaspoon dried herbes de provence

·       2-3 garlic cloves, minced

·       ¼ teaspoon creole seasoning

·       Pinch of red pepper flakes

·       Kosher salt and freshly ground black pepper

·       ½ teaspoon lemon herb seasoning

·       ½ teaspoon paprika

·       ½ teasoon fresh minced thyme
